Your Recipe for Breakfast Success


After posting about Johnnycakes over the weekend, I generated a bit of interest here and there with regard to the recipe. So, I suppose I'll post it here for your enjoyment.

Cornmeal Pancakes (aka "Johnnycakes")
(from page 645 of the Joy of Cooking 75th Anniversary Edition)

Combine in a large bowl:
-1 cup white or yellow coarse cornmeal
-1 tablespoon honey,maple syrup, or sugar
-1 teaspoon salt

Slowly stir in:
-1 cup boiling water

Cover and let stand for 10 minutes
Add, then whisk well:
-1/2 cup milk
-2 tablespoons butter (melted)
-2 teaspoons baking powder

Add and whisk well:
-1 egg

Whisk in with a few quick strokes:
-1/2 cup all-purpose flour

NOTE: You can quite successfully leave out the baking powder and just substitute self-rising flour if you have some handy.

My poor family still thinks pancakes created from a box mix are treats. *Sigh.* I'll be making these for them when I visit home in August. Their minds will be blown.
